Ingredients
- 2 1/2 cups self-rising corn meal
- 1/4 cup all purpose flour
- 2 - eggs
- 2 cups buttermilk
- 2 cups broccoli chopped (semi cooked for 1 minute in micro)
- 1/4 cup onion, chopped fine
- 1 cup sharp shredded cheese
- - add some crisp bacon pieces in for all the bacon lovers

Step 1Pre-heat oven to 425. Mix all ingredients together in a large bowl with a spoon. Spray muffin tin with cooking spray or for you southern gals add a little bacon grease and wipe around edges.

Step 2Cook 25-30 minutes until golden brown on top. Let cool about 8 minutes.
