biscuit pudding with almond cream cheese icing

I created a bread pudding recipe with biscuits. I also created an icing with pudding. It combines cream cheese and almonds.

Ingredients

  • 10 - stale baked biscuits, cut in quartered
  • 1 cup cubed cream cheese
  • 2 cups milk
  • 3/4 cup half and half
  • 4 large eggs, beaten
  • 2 teaspoons coconut extract
  • 1 1/2 cups light brown sugar
  • 3/4 cup malted milk powder
  • 1 teaspoon sea salt
  • ALMOND CREAM CHEESE ICING
  • 1 - container frozen whipped topping, thawed
  • 1/2 cup chilled almond milk
  • 16 ounces cream cheese, softened
  • 1 teaspoon almond extract
  • 3/4 cup chopped almonds

How To Make biscuit pudding with almond cream cheese icing

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Place biscuit pieces and cubed cream cheese in medium baking dish; mix well.
  • Step 3
    In a large bowl, whisk together milk, half and half, eggs, and coconut extract. In a small bowl, whisk together brown sugar, malted milk powder, and sea salt.
  • Step 4
    Whisk the dry ingredients into the wet ingredients until fully incorporated.
  • Step 5
    Pour milk mixture into biscuit mixture. Bake about 30 minutes until golden brown.
  • Step 6
    To make Almond Cream Cheese Icing: in a large bowl:combine whipped topping, almond milk, cream cheese, almond extract and chopped almonds; mix together until blended.
  • Step 7
    Spread over the biscuit pudding and serve.
