Bratwurst Supper Bake

"This hearty supper cooks up just like that...."

INGREDIENTS
3 lbs uncooked bratwursts
3 lbs small red potatoes, cut into wedges (about 2 cups)
1/2 pound baby carrots
1 large white onion, sliced and separated into rings
8 ounces chopped mushrooms (about 2 1/ 2 cups)
1 green pepper, chopped
1/4 cup butter, cubed
1 envelope onion soup mix
2 tablespoons soy sauce
1/4 cup low-sodium chicken stock
1/2 teaspoon pepper
3 tablespoons olive oil
