Brandied fruit cake (2 or 3 layer cake)
INGREDIENTS

For 2 layer cake:

1 small box of yellow cake mix
•
5 Tbs instant pudding
•
1/2 tsp cinnamon
•
1/2 tsp nutmeg
•
3 eggs, separated
•
1 cup brandy
•
1 1/2 cups brandied fruit
•
Icing for 2 layer cake:
•
1/2 pint whipping cream
•
4 oz cream cheese
•
2 Tbs sugar
•
For 3 layer cake:
•
Large box yellow cake mix with pudding in mix
•
6 eggs separated
•
1 tsp cinnamon
•
1 tsp nutmeg
•
1 1/2 cups brandy
•
3 cups brandied fruit
•
Icing for 3 layer cake:
•
1 pint whipping cream
•
8 oz softened cream cheese
•
3 Tbs sugar
