4 12- to 14-ounce European seedless cucumbers, ends trimmed
1/4 head of Napa cabbage (10 ounces), cored and coarsely chopped
1/2 pound ground pork
1/4 cup finely chopped chives or scallions, plus more for garnish
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 tablespoon finely chopped cilantro
1 tablespoon dark soy sauce
2 teaspoons Chinese chili paste or Sriracha
1 teaspoon toasted sesame oil
1 teaspoon cornstarch
1 quart chicken stock or low-sodium broth
