6 tablespoons butter
1/4 cup bacon grease, cooled
3 ounces dark or semisweet chocolate, chopped
1 1/4 cup sugar
2 large eggs
2 teaspoons vanilla
3/4 cup all purpose flour
1/4 teaspoon salt
2 tablespoons unsweetened cocoa powder
1 recipe bourbon caramel (see below)
1 recipe chocolate ganache (see below)
Candied bacon, to garnish, if desired
For the bourbon caramel
7 tablespoons butter
2/3 cup light brown sugar
1/4 cup sugar
1/3 cup light corn syrup
1 teaspoon sea salt
1/4 cup heavy cream
1 tablespoon bourbon
For the chocolate ganache
1/2 cup heavy cream
1/2 cup dark chocolate chips
