12 oz. medium-large raw, peeled, deveined, tailless shrimp, defrosted, cut into pieces

Creole style Seasoning, to taste*

2 Tbsp. butter

1 package bacon, cut into small pieces

1 medium sweet onion, diced
•
1 bunch finely chopped scallions, using all whites and about 1/2 of greens

1/4 cup bourbon
•
1 Tbsp. dark brown sugar
•
1 recipe Avocado Cream Dip (recipe follows)
•
1 recipe Sweet corn Pico de Gallo, if desired (recipe follows)

1 ripe, Fresh Hass Avocado
•
4 oz. Cream Cheese, room temperature
•
2 1/2 oz. soft herbed cheese (half of the pack)
•
1 tsp. minced wet garlic
•
1/4 tsp. salt
•
Salt & Pepper, to taste

•
1/2 sweet onion, diced
•
1 ripe tomato, diced
•
1/2 bunch bunch fresh cilantro, chopped
