1/2 cup small-dice bacon (about 3 ounces)
1/2 cup finely diced red onion (about 1/2 small onion)

3 tablespoons bourbon
2 tablespoons dark or robust molasses (not blackstrap)
2 teaspoons chili powder
1 1/2 teaspoons smoked paprika
1 teaspoon ground mustard
