1/4 teaspoon ground cardamom
1/4 teaspoon freshly grated nutmeg
1 teaspoon salt
4 large egg yolks
1/2 cup (1 stick) unsalted butter, cut into tablespoons, softened
Vegetable oil for frying

4 ounces bittersweet chocolate, finely chopped
3 tablespoons water
2 tablespoons light corn syrup
1/3 cup granulated sugar
3 tablespoons unsalted butter, softened
