INGREDIENTS
For the Pastry Cream:
1 1/3 cups heavy cream
3 egg yolks
1/3 cup granulated sugar
⅛ tsp salt
4 teaspoons cornstarch
2 tablespoons unsalted butter, chilled and cut into 2 pieces
1 1/2 teaspoons vanilla extract
For the Cupcakes:
1 3/4 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
12 tablespoons unsalted butter, softened but still cool, cut into 12 pieces
3 eggs
3/4 cup whole milk
1 1/2 teaspoons vanilla extract
For the Chocolate Glaze:
3/4 cup heavy cream
1/4 cup light corn syrup
8 ounces bittersweet chocolate, finely chopped
1/2 teaspoon vanilla extract
