4 to 5 pound prime rib roast
1-1/2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon ground coriander seed
1 teaspoon ground celery seed
1/2 teaspoon garlic powder
1/2 teaspoon Creole or Cajun seasoning
2 teaspoons black pepper
1/2 cup red wine
For the Au Jus:
1 cup beef stock or broth
2 teaspoons Worcestershire sauce
Horseradish sauce:
1 cup sour cream
2 teaspoons apple cider vinegar
1/4 teaspoon Creole mustard
2 tablespoons horseradish
1/2 teaspoon cayenne pepper or Cajun seasoning
Kosher salt and freshly cracked black pepper, to taste
