Bombay Biryani

INGREDIENTS
3-4 tbsps of vegetable/ canola/ sunflower cooking oil
4 large onions very thinly sliced
For the rice:
1 kg (approx 2 lbs) Basmati rice
1/4 tsp powdered nutmeg
1/4 tsp powdered mace
10 black peppercorns
2" sticks of cinnamon
1 tsp shahjeera
1/2 tsp salt
For marinating the chicken:
1.5 kgs (approx 3 lbs) chicken wingettes (the upper fleshy portion of the chicken wing - it looks like a tiny drumstick!)
Juice of 1 large lemon
3-4 green chillies, pounded coarsely in a mortar and pestle
1 cup yogurt
6-8 mint leaves chopped finely
2 tsps coriander powder
2 tbsps garlic paste
2 tbsps ginger paste
Red chilli powder
1/2 tsp freshly ground black pepper
8-10 dried plums
1 tsp salt
For the Masala:
3-4 tbsps ghee
2" sticks of cinnamon
6 green cardamom
5 cloves
10 peppercorns
5 large black cardamom (badi elaichi)
2 bay leaves
1 tsp shahjeera
4 large tomatoes
Other ingredients:
3-4 tbsps of vegetable/ canola/ sunflower cooking oil
6 baby potatoes, cut into halves
6 hard boiled eggs
For the garnish:
2 tbsps melted ghee
A few drops of orange food color
