You can skip grinding the Sucanat in step 1; however, the scones will have a speckled appearance. Frozen blueberries can be substituted for the fresh blueberries.

3/4 cup heavy cream

1 large egg plus 1 large yolk

1/3 cup (1 3/4 ounces) Sucanat
•
2 cups (10 ounces) all-purpose flour
•
1 tablespoon baking powder
•
3/4 teaspoon salt
•
10 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled

7 1/2 ounces (1 1/2 cups) blueberries
