1/2 cup coconut milk {any other milk will work too}

1/4 cup olive oil or coconut oil

1 egg
•
1/2 teaspoon vanilla
•
zest of one lemon {optional}
•
1 1/2 cups all purpose flour
•
1/2 cup turbinado sugar {white sugar will work too}
•
2 teaspoons baking powder
•
1/2 teaspoon salt
•
1 cup blueberries {I use frozen which works fine.}
