Blue Corn Casserole
"I LOVE love this casserole. It is really light and full of flavor. The cumin gives it this wonderful mexican smokey heat and the creaminess of the cream cheese makes this cornbread casserole a sure hit when accompanying a chicken or pork dish. 8 ounces Philly cream cheese

8 ounces sour cream
•
8 ounces can of cream corn
•
16 ounces bag of niblet corn & butter sauce
•
1 can of diced green chiles
•
1 tablespoon cumin
•
1 tablespoon Paula's house seasoning
•
1 box Jiffy cornbread mix
•
1 cup Colby Jack cheese
•
1 cup crunched up blue corn tortilla chips
•
6 tabs of butter
•
1 Roma tomato
•
1 handful of cilantro
