"I remember blue cheese dressing as a kid, served on a wedge of iceberg lettuce at S&W Cafeteria; an old, elegant, and beautiful Art Nouveau building in downtown Knoxville. I loved it and have loved blue cheese ever since. This version is on the potent side, but can be toned down with the addition of more oil or even a few tablespoons of heavy cream or buttermilk.
