"I love cheesecake and wanted to invent one that was on the healthier side of life. This one is so easy it is all made in the blender. I am diabetic so it is important for me to keep the sugar low and use the better choices for fat in my diet. My dream destination would be Kaui where there are so many wonderful people who need to know that they can still have wonderful food and eat healthy. There is a very serious problem with diabetes in the islands. The coconut oil(healthy oil) and the lemon are actual foods from the islands that inspired me also. Food is the most important thing in Hawaiian culture. Kaui is my dream destination because it is so pristine as the farmers there try to keep "the garden island" beautiful...."

INGREDIENTS
1/2 cup Hot Water
1 cup dry powdered milk
1/2 teaspoon Equal or sweetner of your choice (Stevia works too)
1/2 cup sugar
1 cup room temperature virgin coconut oil
8 ounces package of light philly cream cheese
1 Juice of fresh lemon (or 1/3 cup of the not so fresh.)
1 teaspoon vanilla (good quality)
1 9 inch pie crust (graham cracker crust or your favorite works too)
1 can of cherry pie filling or fresh fruit topping of your choice. Blueberries work well.
