INGREDIENTS
3 cups corn kernels, preferably fresh, but frozen will work
A generous 1/2 cup shredded Cheddar cheese
1/2 cup heavy cream
3 large, local eggs
1/2 teaspoon kosher salt
Grinds of black pepper
1/4 teaspoon crushed red pepper flakes
Herbs: a sprinkling of chopped chives or minced parsley (or both)
Butter or vegetable spray for greasing 4 6-ounce ramekins
