Blackberry Pie - Gonna Want Seconds

3 tablespoons Minute tapioca
1/8 teaspoon salt
8 cups fresh blackberries ((2-36 ounce containers))
2 teaspoons lemon zest
2 tablespoon lemon juice
2 tablespoons water
2 (9-inch) refrigerated pie crusts
2 tablespoons heavy cream or milk
1-2 tablespoons coarse sugar
