Black Eyed Pea Kielbasa Sausage Corn Chowder

INGREDIENTS
1 tablespoon canola oil
1 lb smoked sausage cut in bite size pieces (Kielbasa)
1 medium onion diced
2 stalks celery diced
3 large carrots peeled and cut in bite size chunks
2 cloves garlic minced
1/2 teaspoon ground cumin
1/2 teaspoon Cajun seasoning (see notes)
1/4 teaspoon paprika
1/4 teaspoon fresh ground black pepper
6 cups low sodium chicken broth
1 can (15.8 ounce) black eyed peas drained and rinsed
1 cup fresh or frozen corn
1 can (14.5 ounce) fire roasted tomatoes
4-5 cups fresh baby spinach
