Plus you probably already have what you need on hand at home, meaning you can throw this dinner together without a last minute trip to the grocery store. On busy nights, one of my favorite ways to use canned goods is in a simple veggie burger packed with two types of beans, corn, and some fresh chopped vegetable. Using canned black beans, refried beans, and corn paired with fresh red bell pepper, red onion, cilantro, oats, lime juice, and some spices (things I almost always have at home), these Black Bean Lime Burgers make the perfect quick lunch or dinner. They only take 20 minutes to make from start to finish and are packed with fiber and good for you ingredients. Plus you can make up a big batch since they make great leftovers and freeze well.
