1/2 cup chopped red onion

the juice of one lime

1/3 cup Extra Virgin Olive Oil
•
1/3 cup red wine vinegar
•
Pinch of Salt and Pepper
•
1/4 cup chopped cilantro (optional)
•
1 avocado, diced (add that when you're ready to eat it)
