1 yellow or orange pepper, diced

15-oz can black beans, drained and rinsed

1/4 cup onion, diced
•
2 1 fresh jalapeño pepper, seeded with veins removed then minced

Dressing:
•
1/4 cup fresh-squeezed lime juice
•
1/4 cup extra virgin olive oil
•
1 tsp salt (I like kosher salt for this)
•
1/2 1 tsp black pepper
•
1/2 tsp minced garlic
•
1/4 tsp cayenne pepper, ground (optional)
•
2 avocados, peeled & diced
•
1/2 cup cilantro, chopped (optional)
