1/8 teaspoon lemon oil, or 1 teaspoon grated lemon rind

1 cup milk (regular or low-fat; not nonfat)

*If you use salted butter, reduce the salt in the recipe to 1 teaspoon

•
3 1/3 cups confectioners' sugar

3 tablespoons light corn syrup
•
3 tablespoons hot water
•
3/4 teaspoon vanilla extract*

*For the whitest icing (at the cost of reduced flavor), omit the vanilla

CHOCOLATE ICING

2 2/3 cups confectioners' sugar

3 tablespoons light corn syrup
