Big Batch Pumpkin Bread
"Once the leaves begin to change color in the fall and canned pumpkin is on the supermarket shelves, I think of pumpkin bread. It’s the best recipe for bake sales or just toting to a friend. This recipe makes three big loaves or many smaller ones. It calls for a large can of pumpkin pie mix, but if you can’t find the pie mix in your stores, just use plain pumpkin and add a pinch more cinnamon. ..."

Vegetable oil spray, for misting the loaf pans

Flour for dusting the loaf pans

5½ cups all-purpose flour
•
1 tablespoon baking soda
•
2 teaspoons ground cinnamon
•
1½ teaspoons salt
•
1½ teaspoons ground nutmeg
•
4½ cups sugar
•
1½ cups vegetable oil
•
6 large eggs
•
3 cups canned pumpkin pie mix (see note)
•
1 cup warm water
