300 grams uncooked elbow macaroni pasta (about 3 cups or 2/3 pound)
6 pieces bacon (sliced into 1/4” thick strips)
1/4 cup butter (4 Tablespoons)
2 medium jalapeños (stems, seeds, and membrane removed, finely diced - plus another jalapeño sliced into thin rounds as an optional topping if desired)
2 medium cloves garlic (minced)
1/4 cup all-purpose flour
4 cups whole milk
1 Tablespoon hot sauce (I used Frank’s RedHot Original)
1 teaspoon onion powder
1 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper
1 1/2 cups freshly shredded sharp cheddar cheese*
1 1/2 cups freshly shredded pizza mozzarella*
1 cup freshly shredded parmesan cheese* (divided)
1/2 cup panko breadcrumbs
