½ cup diced green bell pepper
1 celery stalk (diced)
1 bay leaf
1½ teaspoons sweet paprika
1½ tablespoons hot sauce (like Tabasco)
1 quart chicken stock
3 teaspoons kosher salt
1 teaspoon ground black pepper
1 tablespoon granulated sugar
Sliced scallions (green and white parts)
Fresh chopped cilantro
1/3 cup canola oil
1 large yellow onion (diced)
¼ cup unsalted butter (softened)
