2 1/2 lbs stew meat or boneless chuck roast
1 1/2 teaspoons salt (plus more as needed)
1/2 tsp freshly ground black pepper (plus more as needed)
1 medium yellow onion (chopped)
4 cloves garlic (minced)
3 medium carrots (about 12 oz, cut on a slight diagonal into 1 1/2-inch piece)
3 medium Yukon Gold potatoes (about 12 ounces total, cut in about 1 1/2-inch chunks)
2 celery ribs (coarsely chopped)
2 Tbsp tomato paste
1 tsp dried thyme
1 cup beef broth
2 Tbsp Worcestershire sauce
1 Tbsp cornstarch (or arrowroot starch)
3/4 cup thawed green peas
Fresh parsley leaves (for garnish (optional))
