INGREDIENTS
sponge cake
6 large eggs
1 cup sugar
1/2 teaspoon almond extract
1 cup King Arthur Unbleached All-Purpose Flour
1 teaspoon baking powder
1/2 teaspoon salt
citrus soaking syrup
3/4 cup water
3/4 cup sugar
2 tablespoons fresh lemon zest (grated peel of 2 lemons)
1/3 to 1/2 cup lemon juice (juice of 2 lemons)
pinch of ground cloves
3 tablespoons Grand Marnier or other orange liqueur*
citrus cream filling
2 cups mascarpone cheese
2 tablespoons freshly grated orange peel (from 1 orange)
1 cup heavy or whipping cream
1/2 cup confectioners' sugar
2 quarts fresh berries of your choice (strawberries, blueberries, raspberries)1 1/2 teaspoon salt
