2 cups shredded Colby-Jack cheese, divided

For Green Chili Cornbread Topping:

2 (8.5-oz) boxes cornbread mix
•
1 cup buttermilk
•
1 large egg
•
2 Tbsp melted butter
•
2 Tbsp diced canned green chili peppers
