Ingredients: 2 tbsp butter; 1 tbsp sweet paprika, plus extra for sprinkling; 1 onion, thinly sliced; 2 tbsp olive oil; 8 oz (225 g) cremini mushrooms, sliced; 1 1/4 cups sour cream or creme fraiche; 1 1/2 lb (700 g) filet mignon, cut across the grain into 2 - 1/2 in (5 - 13 mm) strips; 1 tbsp Dijon mustard; salt and freshly ground black pepper; 2 tbsp fresh lemon juice; 3 tbsp all-purpose flour
