INGREDIENTS

1/4 cup (50 mL) unsalted butter, divided
1/4 cup (50 mL) finely chopped shallots
1 1/2 lbs (750 g) mushrooms, thickly sliced
3 tbsp (45 mL) all-purpose flour
4 cups (1 L) beef stock
2 tbsp (25 mL) cognac
1/2 cup (125 mL) whipping (35%) cream
1 tbsp (15 mL) Dijon mustard
4 oz (125 g) wide egg noodles
1 cup (250 mL) sour cream
1 tbsp (15 mL) chopped fresh dill
