These sandwiches are a hit with "kids" of all ages. Makes for a great snack on those camping or backpacking trips

Ingredients

  • 2 1/2 oz. pouch sliced dried beef, rinsed, cut in thin strips
  • 1 C. shredded mozzarella cheese
  • 1/2 C. chopped radishes
  • 1/2 C. chopped celery
  • 1/2 C. chopped onion
  • 1/2 C. chopped cucumber
  • 1/2 C. low-calorie Italian salad dressing
  • 2 C. shredded lettuce
  • 1 C. chopped tomato
  • 3 pita bread rounds, cut in halves crosswise, pockets slit

How To Make beef pita pocket

  • Step 1
    Toss together all ingredients except lettuce, tomato, and pita bread. Place mixture in Ziploc plastic bag. Place chopped tomato and lettuce in separate plastic bags. Keep chilled. When ready to eat, spoon dried beef mixture into pita pocket, top with tomatoes and lettuce.
