Beef Enchilada Dip
"All the flavours you know and love about Beef Enchiladas....in a hot bubbly dip! The secret ingredient in this is refried beans. It makes the dip gorgeously creamy! This makes a big batch because it's easier to make one big batch and freeze half if it's too much, rather than to worry about using half cans of the ingredients. ???? The taco seasoning is a must to add! It adds LOADS of extra flavour into the dip which you need when using this as a dip rather than an Enchilada filling!..."
INGREDIENTS

2 tsp oil

2 garlic cloves, minced

1 onion, finely chopped
•
1 lb ground beef
•
1 packet taco seasoning
•
14 - 16 oz can refried beans
•
10 oz can Enchilada sauce of choice (I use Medium Mild Old El Paso)
•
14 oz black beans, drained
•
2 cups grated Montery Jack or Cheddar Cheese
•
Cilantro, for garnish
