Beef Empanadas Recipe

"A classic beef empanadas recipe...."

INGREDIENTS
2 1/4 cups unbleached all-purpose flour
1 teaspoon kosher salt
10 tablespoons cold unsalted butter (1 1/4 sticks), diced
1 large egg
1/2 cup ice water
1 tablespoon distilled white vinegar
1 tablespoon olive oil
1 yellow onion, finely diced
Kosher salt
1 small red bell pepper, finely diced
1 small green bell pepper, finely diced
1 pound ground beef, preferably organic
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 cup tomato purée
2 tablespoons hot sauce
1/2 cup chopped sliced pimento-filled green olives
1/2 cup currants
2 teaspoons honey
1 large egg yolk, beaten with 1 teaspoon water
