Beef Bourguignon

INGREDIENTS
4 tablespoons butter
2 pounds chuck roast, (or stew meat, cut into 1-inch cubes and pat dry)
1 package (8 ounces) baby Bella mushrooms, (sliced)
1 yellow onion, (finely diced (approximately 1 cup))
10-12 small pearl onions, (peeled)
2 large carrots, (peeled and cut into rounds (approximately 1½ cups))
5 cloves garlic, (minced)
¼ cup all-purpose flour
2 cups red wine merlot, (or pinot noir)
1 bay leaf
3 tablespoons fresh parsley, (chopped)
½ teaspoon dried thyme
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 cups beef broth
salt and pepper, (to taste)
