6 slices bacon, cut into 1 inch pieces

1.5 lb stewing beef, cut into 2-inch chunks
2 cup carrot, sliced
2 cups white onion, diced
1 pinch coarse salt and freshly ground pepper
2 TBSP flour
1 cups red wine
2 1/2 cups beef stock
1 TBSP tomato paste
2 cloves smashed garlic
1/2 tsp thyme, chopped
1 bay leaf
1 1/2 TBSP butter
1 TBSP Olive oil
1 lb white mushrooms, quartered
