Beef and Vegetable Soup

INGREDIENTS
1 pound ground beef
1 cup onion, diced
1 cup carrot, diced
1 cup celery, diced
2 tablespoons garlic, chopped
1 teaspoon thyme, chopped (or 1/2 teaspoon dried thyme)
1/2 teaspoon rosemary, chopped (or 1/4 teaspoon dried rosemary)
2 teaspoons (smoked) paprika
2 tablespoons tomato paste
4 cups beef broth
1 (14.5 ounce) can diced tomatoes
2 cups potatoes, diced
2 bay leaves
1 tablespoon balsamic vinegar
1 tablespoon Worcestershire sauce (gluten-free for gluten-free)
1 teaspoon fish sauce (or soy sauce) (gluten-free for gluten-free)
1 cup peas
salt and pepper to taste
1 tablespoon parsley, chopped (optional)
