Beef and tomato – our Chinese fake-away!

INGREDIENTS
500 g beef or steak sliced into thin pieces
1 tbsp cornflour
1 tsp vegetable oil
¼ tsp salt
2 tbsp tomato ketchup
2 tbsp light soy sauce
1 ½ tsp sugar
½ tsp sesame oil
1 pinch freshly ground white pepper to taste
3 tbsp vegetable oil
3 sticks thinly sliced ginger
1 clove garlic, finely minced
¼ cup sliced shallot (or red onion)
1 large spring onion, cut into 2-inch pieces at an angle
4 large tomatoes, cut into wedges
1 tbsp Shaoxing wine
½ tbsp cornfour mixed with 1 tablespoon water
