Ingredients
- FILLING
- 1 cup sugar
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 1/4 cup cold water
- 1 1/4 cups hot water
- 1/4 cup lemon juice
- 1 tablespoon lemon rind, grated
- 3 large egg yolks, lightly beaten
- 2 tablespoons margarine
- CRUST
- 1 - cooled baked shell
- MERINGUE
- 3 large egg whites, beaten
- 6 tablespoons sugar
How To Make lemon meringue pie

Step 1Combine sugar, cornstarch and salt Blend in cold water Add hot water Cook until thick, stir constantly Reduce heat and cook until clear (5-8 minutes) Add lemon juice and grated lemon rind, cook for 2 minutes Blend mixture slowly into 3 egg yolks, slightly beaten Return to pan, cook 2 minutes stirring constantly Add 2 tsp butter Cool, turn into cooled baked shell

Step 2In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.

Step 3Brown at 325 for 15 minutes.
