6 cups vegetable broth or stock

1/2 cup barley
•
1 cup dried porcini mushrooms, soaked in a cup of hot water for 10 minutes
•
1 15.5 ounce can diced tomatoes
•
3 cups chopped kale, tough stems removed
•
1-2 tablespoon sherry wine vinegar
•
salt and pepper to taste
