3 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup canola oil
2 cups finely chopped ripe bananas (about 3 medium)
1 can (8 ounces) crushed pineapple, undrained
1-1/2 teaspoons vanilla extract
1/2 cup sweetened shredded coconut
1 cup chopped nuts
Optional: Confectioners' sugar, whipped cream and sliced ripe banana
