4-5 lbs. cherry tomatoes, washed well, large ones cut in half

1-2 onions, coarsely chopped
•
4-6 cloves garlic, peeled
•
2 TB. balsamic vinegar
•
1 TB. Italian seasoning (or a blend of your favorite Italian seasonings)
•
2 tsp. salt (or to taste)
•
1 tsp. black pepper
•
1/2-1 tsp. crushed red pepper flakes (optional)
