INGREDIENTS
1/4 cup all-purpose flour
1/2 teaspoon kosher salt, plus more to taste
1/4 teaspoon black pepper
1 teaspoon coriander, toasted and ground
1 teaspoon cumin, toasted and ground
1/8 teaspoon ground cinnamon
2 lamb shanks
2 tablespoons olive oil
4 cloves garlic
1 large yellow onion, diced
3 carrots, peeled and cut into chunks
4 celery ribs, cut into chunks
2 sprigs rosemary, de-stemmed and finely chopped
2 sprigs thyme, de-stemmed and finely chopped
Zest of 1/2 a large orange
1/2 cup good balsamic vinegar
1 cup white wine
4 cups chicken stock
