Baklava with Rose, Cardamom and Pistachio

"You can make two variations of Richard's baklava recipe either rose, cardamom, and pistachio, or you can try it with orange, cinnamon, walnut, and almond. This recipe is featured in the "Patisserie" episode of The Great British Baking Show...."

INGREDIENTS
For the rose, cardamom and pistachio baklava:
225g (8 oz) granulated sugar
2 tbsp clear honey
1 tsp lemon juice
1 tbsp rose essence (or 2 tbsp rosewater)
200g (7 oz) shelled pistachios
75g (2 1/2 oz) icing sugar
1/2 tbsp ground cardamom
6 sheets ready-made filo pastry
75g (2 1/2 oz) butter, melted, plus extra for greasing
For the orange and cinnamon baklava rolls:
225g (8 oz) caster sugar
2 tbsp clear honey
1 tsp lemon juice
1 tbsp orange essence
100g (3 1/2 oz) walnuts
100g (3 1/2 oz) almonds
75g (2 1/2 oz) icing sugar
1 tsp ground cinnamon
1 orange, zest only
3 tbsp crystallized ginger, finely chopped
6 sheets ready-made filo pastry
75g (2 1/2 oz) butter, melted
