INGREDIENTS
1/3 cup packed light brown sugar
1/3 cup mirin (see note following ingredient list)
1/3 cup low sodium soy sauce
1/4 cup unseasoned rice vinegar
1 1/2 pounds boneless (skinless chicken breasts or thighs)
2 Tablespoons vegetable oil
Sprinkle:
2 Tablespoons toasted sesame seeds
1 Tablespoon minced spring onions
1 teaspoon red chili flakes
grated zest of 1 orange
NOTE:
When a recipe calls for mirin, the Japanese sweet rice wine, you need a combination of acidic and sweet flavors. Add between 1 and 2 tablespoons of sugar to 1/2 cup of white wine, vermouth, or dry sherry to replace 1/2 cup of mirin.
