2 medium organic sweet potatoes, rinsed

2 tablespoons of extra-virgin olive oil

1 medium organic yellow onion, sliced into half rings
•
2 organic Roma tomatoes, diced
•
1 bag organic raw spinach, washed
•
2 eggs (optional for topping potato)
•
Salt and pepper to taste
•
*For a healthy dose of protein and to up the calorie intake, you can add 1 fried egg on top each sweet potato if desired.
