1 c blueberries (frozen work fine)

1/3 c unsweetened shredded coconut
•
6-8 dried apricots, sliced into strips
•
2 c whole milk
•
1/4 c maple syrup
•
2 T vanilla sugar (see recipe headnote)
•
1 large egg
•
2 T cold butter + more for greasing the pan
•
1 t vanilla extract
•
heavy cream for serving over top (optional)
