INGREDIENTS

For the Stuffed Shells:

55 Jumbo pasta shells*
•
2 cups part skim ricotta cheese
•
1 ½ cups 2% cottage cheese (large curd)
•
1 ½ cup shredded fresh mozzarella cheese, divided [1 cup is for the topping.]

¼ cup freshly grated Parmesan cheese
•
¼ cup fresh cilantro, chopped
•
¼ cup fresh basil, chopped & packed into the measuring cup
•
¾ pound ground beef (I used 96% lean)

For the Quick Sauce:**
•
2 tablespoons olive oil
•
½ cups yellow onions, chopped [More if you wish. I used almost a full cup]
•
3 cloves garlic, minced
•
28 oz can San Marzano tomatoes, crushed (or whole and you can crush them in the pan)
•
¼ cup fresh basil, chopped (not packed)
•
1 teaspoon fresh thyme, chopped
•
salt and pepper to taste
