Ingredients:
4 skinless pollock fillets of around 170g for adults and 140g for children (thicker fillets are preferable but don't worry if yours are thin)
2 large (or 3 medium) ripe tomatoes
125g feta cheese
1 large lemon
A good pinch of mixed dried herbs like "herbes de provence"
Olive oil
Freshly ground pepper
